Every dish is built around real spice work: blooming whole spices in hot oil, slow-cooking lentils overnight, baking bread directly against the walls of a hot tandoor.

Punjabi Tadka builds every dish on a foundation of whole spices: cumin, cardamom, coriander, Kashmiri chilli, dried ginger and fenugreek. Punjabi Tadka toasts and blooms these spices at the start of cooking so their oils release fully into the sauce.

Slow cooking is central to Punjabi Tadka's approach. Dal Makhani simmers overnight. Curries are layered over low heat until the oil separates from the masala base, a classic sign in Punjabi cooking that the dish is ready. Breads are baked in a tandoor clay oven, giving naan its characteristic charred blisters and soft interior.
